I think what you're referring to -- the building going up directly next to Old Navy, adjacent to the "main" mall entrance -- that's going to be Elephant Bar. They just opened another one at Altamonte Mall. ElephantBar.com

The parcel across Shingle Creek from Bloomingdale's, adjacent to the new office buildings -- that's another apartment project, "Aqua", by Broad Street Partners (the developers of Mosaic at Millenia and Heritage on Millenia). They have several apartments planned for those undeveloped parcels on that side of the mall. BSP website (then scroll to the bottom)
